Father's Day

I looked up the definition of Father, and it says: “a man in relation to his natural child or children.” I think of my influences as a child and woman today and father means so much more. I’m very blessed to have been raised by a wonderful Dad he’s a model of everything an honorable male should be; loving, hardworking, faithful, smart, wise, fun, and simply amazing in so many ways. Then I think of the man that I married, he is so similar in characteristics (don’t they say you marry your Dad? Well I did); he’s also loving, sharp, determined, patient, fun, handsome….. the list could go on and on. I couldn’t be more proud of the men in my life and hope these dominant figures will mold my little men into the same brilliant beings for their offspring & others they influence in their future ahead. Who in your life is “your father” or your mold??…..We all come from different walks of life; experiences, faiths, tragedy, some of us maybe even raised without a father, so as we approach Father’s Day let it be a day to celebrate the men or people that have influenced us in a positive way! Tell them thanks and that you appreciate all they do.  If it's your father in heaven, honor him by recreating his favorite meal. Or eat at his favorite restaurant and reflect on good memories and share those times with your loved ones who are living and they can continue to pass it on. Make sure you have an evening meal planned with them to say thanks or honorary meal to share with your loved ones!!! Hope everyone has a special week!

Sunday – Country Style Ribs & Corn Bread Casserole

Salt and Pepper & BBQ sauce meaty side down, cover with foil, bake 2 hrs 300 degrees. Uncover flip meat, bake another 30 minutes uncovered.

When there is an hour 1/2 left for the ribs, start the prep on the corn casserole. Mix ½ C butter melted. 1 can creamed corn, 1 can sweet corn, 1 pkg jiffy corn bread mix, 1 C sour cream, 1 eggs. Bake for 1 hr. 40 or so minutes since its at 300 degrees.

Shred up your left-over meat for tomorrows pizza!

Monday – BBQ Pizza and Salad

Prep your dough. Top with BBQ Sauce, the left over shredded pork meat, red onion, green pepper, and moz cheese. Bake as directed on the Pillsbury package!! Prep your side salad to go with!

Tuesday – BLT & Roman Slaw

Skillet on medium heat add your strips of bacon (3 minutes on each side, you will notice when brown, I like to overcook mine so it’s nice and crunchy). Start salad now. As bacon gets done put on plate topped with paper towels to drain grease. Slice the tomato, clean your lettuce. Once bacon is almost finished, start to toast your bread. Top bread with mayo, tomato, lettuce then add your bacon. Cut in half.

Get out a big bowel. Add the bag of cleaned coleslaw. 1 C of sunflower seeds, 1 bag of crunched up ramon noodles (don’t add seasoning). ¾ C veg. oil, 1/3 C vinegar, ½ C sugar. Mix together. Refrigerate. I love to get some grilled chicken to add to the salad and eat it through the week for lunches! So good!
